Description

Clad in random-pattern carbon damascus steel made in-house by Leszek Sikon at his one-man studio, the large, head-turning blade of this striking gyuto stretches an impressive 280mm / 11” from heel to tip. Standing just over 57mm tall and balanced naturally a touch in front of the choil, the long, slim, triangular blade feels immediately at home in the chef’s hand—equally prepared for heavy chopping tasks and long, precise slicing and carving whether in the kitchen or table-side for all to enjoy.

Forged by hand from the fine, pointed tip back to the sturdy heel, the blade showcases Leszek’s traditionally sculpted compound geometry. A carefully hammered concave section creates the signature wave texturing, aiding food release and overall cutting performance before giving way to a lower convex bevel that culminates in a versatile, symmetrical edge. At its core is 26c3 “Spicy White” high-carbon steel, a clean, low-alloy material prized by culinary bladesmiths for its edge stability and keen sharpness. The steel carries mass and authority through the rear of the blade for dense ingredients, then slims progressively toward the tip where finesse and control are paramount.

Anchoring the blade is a tapered, octagonal wa-style handle that pairs a beautifully figured piece of masur birch with Leszek’s iconic brute-de-forge integral bolster. Eye-catching yet exceptionally comfortable in the pinch grip, the handle completes a gyuto built to perform at the highest level while expressing the unmistakable character of its maker.
