Description

Crafted with his usual technical mastery, this one-of-a-kind chef knife from Austrian bladesmith Tobias Hangler is built for serious culinary performance. At its core is ApexUltra tungsten–carbon steel, a blade-specific alloy Tobias co-developed through his metallurgical background to deliver exceptional edge retention, fine grain structure, and superb hardenability. Heat-treated to an impressive 66 HRC using his proprietary process, the edge is honed for daily precision at a microscopic level. The core is encased in Tobias’s house-made nickel-damascus, its 30 distinct layers undulating throughout the blade’s length. Polished primary bevels meet subtly textured, forge-finished flats, creating contrast and highlighting the movement within the damascus. Standing 58mm at the heel, the blade offers ample knuckle clearance and a gently curved profile ideal for rocking, chopping, and slicing through even large ingredients. Rigid along the spine and slim toward the tip, the knife tapers into a fine, needle-like point suited to delicate work. Tobias’s superb convex edge geometry ensures low resistance and confident food release, giving the blade a fast, responsive feel on the board. Balanced around an inch in front of the heel, it carries its weight with intention, allowing the blade to do the work. For comfort and control, the handle is carved from beautifully figured Tasmanian Blackwood in a symmetrical, tapering shape that suits nearly any hand or grip. A polished nickel-silver ferrule completes the build with quiet refinement. With his rare blend of metallurgical expertise and aesthetic vision, Tobias creates tools that merge science, craft, and performance—this exceptional chef knife among them.
