Description
A striking new interpretation of Don Carlos Andrade’s Shallot Knife, the Taijitu 140mm brings together contrast, balance, and quiet power in a compact, endlessly capable utility blade. Forged from 52100 high-carbon steel, the dark, matte blade surface sets the stage for a razor-sharp 140mm edge shaped to tackle far more than shallots alone—swift slicing, refined prep, delicate tip work, and controlled chopping. Don’s superb full-convex geometry gives the blade a confident, workhorse feel, its strength reinforced by a spine that begins stout and tapers gracefully to a needle-like tip. The mirror-polished spine and choil provide visual brightness against the matte steel while offering soft comfort in the pinch grip. In hand, the sculpted white micarta handle evokes the harmony of yin and yang for which the knife is named—smooth yet structured, refined yet resilient. Don’s meticulous detail carvings bring subtle dimension to the surface, while his signature translucent green G10 inlay adds an unexpected, luminous focal point. A matching cloth-covered saya completes this one-of-a-kind tool built for the discerning chef.
