Description
Each winter, artist, sculptor, and chef-turned-bladesmith Don Carlos Andrade brings us something unique and extraordinary. As expected, this trio of one-of-a-kind Chef’s Step Utility Knives embodies everything we admire in his work — heirloom craftsmanship, refined performance, and a touch of holiday brilliance. Crafted by hand with Don’s signature precision, each 135mm blade in 52100 carbon steel features his outstanding convex bevel geometry, thinning to a razor-sharp edge for confident daily use. A full-distal taper along the polished spine contrasts beautifully with the dark, patinated bevels, balancing power and finesse for everything from hearty prep to delicate slicing. Each handle showcases a unique expression of Don’s artistry — one in beautifully figured Hawaiian Koa capped in vintage International Paper Co. linen micarta, another in stabilized redwood with green G10, and the third in striking bocote with burgundy G7 laminate. All share his signature wa-style shield-profile form, tapering back to front through subtly curved and faceted faces for unihibited control. Lightweight, balanced, and sculpted to inspire, these limited 2025 editions capture the soul of Don’s craft — three singular works for chefs who value beauty, precision, and the poetry of daily use. A custom cloth-covered saya is included with each.
