Description
Artist Don Carlos Andrade, a trained chef and master craftsman with over 40 years of experience, only creates culinary tools he would proudly use in his own kitchen. This handmade petty chef knife is one you, he, and anyone with food to prepare will reach for daily. With a French-inspired 152mm / 5.2″ profile, Don forges the blade from 26c3 “Spicy White” high-performance steel, a clean, high-carbon alloy prized for its fine grain structure and sharp, versatile edge. His pronounced convex bevel geometry produces a dynamic tool that is tough and durable enough to power through the densest ingredients, yet refined and precise for the most delicate slices. A rounded spine tapers steadily forward, ending in a fine, needle-like tip for exceptional detail work. Don’s purposeful differential heat treatment and hardening process create a beautiful hamon line, revealed through a hand-sanded satin finish and etch. Completing the piece is Don’s signature shield-profile wa handle, here sculpted from striking tulip secured with a flush bronze pin and capped with a tapering ferrule of red G-7 laminate. A true everyday companion, this knife blends beauty, performance, and soul—ready to make every cut a joy.
