Designed and forged in his Northern California studio, the story of this singular culinary tool begins with the completion of Nick’s Angel Wing damascus. Combining two high-carbon alloys, 1084 and nickel-rich 15n20, and transforming them through carefully calibrated twists, turns, and folds, the resulting pattern appears to take flight.
This otherworldly bar of steel is then shaped through deliberate hammer blows before the final bevel geometry and shimmering surfaces are honed and finished with precision. With cutting performance firmly in mind, Nick employs his superb compound S-grind geometry: convex lower sections above the thin, hard, razor-sharp edge transition into a hollowed concave portion above, delivering efficiency and fluidity across the board regardless of task.
A forged swell at the choil creates a luxuriously contoured resting point for the middle finger in the pinch grip, while a clipped detail along the spine adds visual boldness and serves as a practical flat edge for moving ingredients across the board’s surface. The handle begins with a forged integral bolster, where the Angel Wing damascus is revealed in a new and striking light across each face. From there, with stepped, heirloom-fit transitions, steel meets a vivid piece of robin’s-egg-blue G10, finished at the rear with a precisely engineered stainless steel cap and retention bolt—an elegant expression of the internal mechanical union between handle and tang, and a thoughtful provision for future care or maintenance.
