Description
Jason Ellard’s feathered dragon’s breath mosaic damascus, made in-house, is married to an edge bar of ApexUltra tungsten-carbon steel. The Tasmanian artist has the ability to combine form and function; sculpture and efficacy; beauty, and performance; like no other, and this chef’s santoku is proof.

Thin, light, and impeccably balanced, the 210mm blade is the versatile kitchen tool that handles 90% of what a cook needs. Enough curvature to the edge and ample heel height at 53mm allow the razor-sharp edge to rock and chop through the largest and densest ingredients with ease. Its center of mass sits a touch in front of the heel, giving the 5.9oz knife a quick, nimble feel in hand. Beautifully convex symmetrical bevels converge through the hard, darkly etched edge bar at a very thin edge, well supported in the rear for strength and progressively slimmer approaching the tip, where the steel practically disappears at a needle-like culmination. Lateral flexibility in the forward half is measured and controlled, a sign of Ellard’s expertly managed hardening process.

A carefully selected piece of dyed and stabilized maple burl is carved into a hand-filling shield-inspired wa profile that combines flat facets and gentle curves. Capping the build is an antiqued solid brass bolster, fitted to the wood with heirloom fit.

At home in the kitchen. More than presentable at the table. Jason Ellard makes very few objects that are not both.
