Description

A rare build by Ian Rogers of Haburn Knives, available in pre-owned, unused, like-new condition. Shaped from 52100 high-carbon steel, the 153mm single-bevel blade is a high-precision instrument traditionally designed for breaking down and deboning poultry, a favored Japanese blade style among chefs worldwide, valued for the combination of toughness and delicate control it demands in equal measure.

The long, shield-style wa handle paired to a relatively short blade gives the hand an unusually high degree of control at every cut and angle. The triangular tip maintains structural strength while delivering a pointed, needle-like end ready to move through the toughest fibers. Single-bevel geometry, honed for right-handed use, produces the slimmest, sharpest edge possible. Proteins part cleanly, tissues stay intact.

A higher polish along the right face flat contrasts the silky satin finish of the bevel and backside. Arizona desert ironwood and African blackwood complete the grip, the two materials meeting in a shield-style wa form that sits naturally in the hand from the first cut.
