Description
A true Don Carlos Andrade original, the Moon Base Step Sujihiki is designed for more than meal prep alone. Handcrafted in Los Osos, California, it is meant to inspire the chef—to reach beyond the familiar, to explore deeper, and to find beauty where least expected. Forged by hand from 26c3 “Spicy White” high-carbon steel, a clean, low-alloy material prized by culinary bladesmiths for its fine grain structure and exceptional sharpness, Don shapes a long, slim, and versatile 220mm / 8.7” profile that excels at slicing proteins and vegetables alike, while readily taking on chopping tasks with equal confidence.
Whether performing detail work with its low, pointed tip or chopping nearer the rear of the curved edge at the 43mm-tall heel, the hard, razor-sharp secondary bevel beneath Don’s meticulously formed convex geometry is poised to perform with precision and efficiency. A clay-assisted differential hardening, followed by Don’s silky, hand-sanded satin finish and etch, reveals a beautiful hamon line along the blade’s darkened faces.
Complementing the steel’s moody aesthetic is a handle as comfortable as it is captivating, sculpted from cool red vintage micarta and set with opposing round Corian inlays that read like windows into the night sky and distant past. Secured by a pair of domed, hand-peened bronze pins—reminiscent of the dueling suns of a binary star system—this one-of-a-kind Andrade is as distinctive, functional, and handsome as they come. A custom cloth-covered saya is included.
