Description
This one-of-a-kind Leszek Sikon gyuto features a 238mm / 9.4” blade forged by hand from Leszek’s own san mai high-carbon steel formula. With O1 and pure nickel cladding surrounding a core edge of 26c3 “Spicy White” steel, the knife is conceived as a chef’s true daily workhorse: versatile, resilient, and capable.
A thin, hard, razor-sharp edge balances toughness with precision, while the convex bevel geometry above the edge slims steadily from the 60mm-tall heel toward a fine, responsive tip. This progression allows the rear of the blade to move confidently through dense ingredients before transitioning seamlessly into controlled, finesse-driven slicing. Food release and overall cutting performance are further enhanced by Leszek’s distinctive approach to compound geometry, in which a traditionally forged-in concave section creates the prominent wave pattern that runs the length of the blade.
The tall profile provides a generous flat section at the heel for efficient chopping, while the edge sweeps upward through the forward half to accommodate carving, detail work, and long, clean cuts of all kinds. In hand, the knife is anchored by Leszek’s trademark brute-de-forge integral bolster, wonderfully comfortable in the pinch grip, and transitioning into a beautifully figured maple burl handle, finished with a natural live-edge end. Purposeful and expressive, this gyuto is built to earn its place at the center of a working kitchen.
