Description
By Poland’s Leszek Sikon comes a true workhorse nakiri, styled in his iconic brute-de-forge aesthetic and honed for powerful, everyday chopping. Beautifully balanced just forward of the blade’s 65mm-tall heel, the knife’s 10.7oz / 304g of mass lends a steady, authoritative feel in the hand—a tool built to take on the most demanding kitchen tasks with confidence.
Chopping efficiency and food release are hallmarks of Leszek’s traditional compound bevel geometry. A hand-forged concave section creates the knife’s distinctive wave texturing before transitioning into the convex lower bevel that culminates at a hard, keen edge. Etched and polished to a dark, moody finish, Leszek’s well-loved san mai steel is made in-house from O1 tool steel and a bright vein of pure nickel, wrapped around a core edge of clean, low-alloy 26c3 “Spicy White” high-carbon steel.
Comfort, control, and visual presence come together in the handle, which begins with Leszek’s hand-hewn integral bolster and flows into a striking piece of maple burl, tapering from back to front and finished with a natural live-edge end. Purposeful and unapologetically capable, this nakiri is built to earn its keep through years of daily use.
