Description
Artist Jayden Simisky’s Signature Collection knives combine the bold aesthetic he is known for with the all-business function of a tool built for daily use. This petty chef delivers on both.
Forged by hand at his Colorado studio, the 162mm / 6.4″ blade is infinitely handy, shaped from homemade high-carbon damascus in 1095 and 15n20 alloys, polished and etched to a dark, high-contrast finish that feels almost geological. The symmetrical bevels are complemented by forge-finished flats and tang that bear the marks of the knife’s hand-hammered origins, a surface that tells its own story before the knife ever reaches the kitchen.
The geometry beneath is where the real work happens. Honed for pure cutting performance and food-release, thoughtful convexity tapers to a very thin, hard, and razor-sharp edge from tip to 47mm-tall heel. The spine’s full distal taper culminates at a glass-thin tip that rewards a delicate hand, making this mid-size blade equally at home chopping the densest ingredients and slicing with precision. Balanced, comfortable, and nimble, this is the knife you end up reaching for without thinking.
The tapering octagonal wa handle is shaped from African Blackwood and koa, two visually arresting handle woods in their own right: dark and composed at the rear, warm and richly striped toward the blade. Jayden caps the ensemble with a ferrule of wrought iron with heirloom fit, a detail that anchors the handle to the blade with the gravity the rest of this knife deserves. Some knives are acquired. This one gets inherited.
