Description

Fingal Ferguson is known for many things: his home on the Gubbeen farm in West Cork, the charcuterie, the unmistakable visual language of his knives. What is newer — and worth paying attention to — is the forge.

This knife is one of Fingal’s forged blades, shaped entirely at his farm workshop from a materials combination that sets it apart from the outset. The core is ApexUltra, a tungsten-carbon steel developed specifically for edged tools by metallurgist and Eatingtools maker Tobias Hangler. It is a purposeful choice of steel — high-performance, refined, and not widely available — clad here in damascus and finished to a striking high-contrast etch.

The blade profile is considered. A flat stretch at the heel invites the chopping grip; a pronounced curve carries through to a high, finely pointed tip suited to detail work. The spine tapers aggressively from 3.6mm at the choil to just 0.8mm an inch from the tip, and the effect in the hand is remarkable. At 5.5oz across 227mm, this knife carries with a lightness that genuinely surprises. It is not built to power through — it is built to move, to respond, to make a full day of prep feel effortless. Lateral flexibility develops naturally through the forward half, right where it is most useful.

The handle is stabilized redwood burl, deep-figured and darkly rich, with a carbon fiber bolster and butt cap, nickel silver spacer, and a retention bolt pin visible at the rear — evidence of the handle’s internal mechanical fastening, and a detail that rewards a closer look.
