Crafted from homemade high-carbon canister damascus for which artist Joseph Schrum combines 52100 ball bearings with powdered steel, the 140mm blade of this one-of-a-kind petty chef is as handy and versatile in the kitchen as it is inspiring to behold. Beneath Joseph’s masterfully sculpted convex bevel geometry is a thin, hard, extremely sharp edge with mass enough for the toughest ingredients and precision for the most delicate cuts. Tapering distally for its entirety, the blade material begins at nearly 5mm at the tang, forged down to 3.1mm above the heel, 1.7mm at the midpoint, 1.1mm an inch from the tip, and finer still before reaching a finely pointed end.
