Description
We’re releasing this singular, one-of-a-kind Oliver Märtens gyuto to coincide with—and commemorate—the debut of our newest Living Steel model, Oliver’s Modern Chef LS210. This exceptional build unites the striking contemporary aesthetic we’ve come to expect from Oliver with the engineering precision and technical mastery that make his chef knives so revered by cooks around the world.
At 245mm / 9.6” long and standing 60mm tall at the heel, the blade meets the board with remarkable versatility, anchored by a hard, exceptionally thin, razor-sharp edge of ApexUltra tungsten–carbon steel. Jacketing this high-performance core on either side is 100-layer damascus, its flowing, high-contrast pattern etched and polished to a head-turning sheen. Above the medium-height, symmetrical bevels, shaped with subtle convexity, lie the textured flats, each bearing the hammer marks and surface character of its hand-forged origins.
Balancing just in front of the handle at the choil, the knife feels quick, steady, and nimble in the hand. The rear half of the edge powers through confident chopping, while the paper-thin tip—reached via a full distal taper—handles the most delicate slices with ease.
For comfort and control, Oliver pairs the blade with a handle as refined as the steel itself: a modern interpretation of the geometric wa form, sculpted from black micarta and anodized aluminum. At the rear, a matching aluminum butt cap and screw allow for simple handle removal should care or maintenance ever be required.
