Description
Big, bold, and finished to turn heads, Salem Straub fashions his incredible bow-tie mosaic damascus steel into a bunka chef’s knife of magnificent proportions. Designed to move through any ingredient with ease, 220mm / 8.66” of razor-sharp edge sits beneath tall, symmetrical compound S-grind bevel geometry, honed with cutting performance firmly in mind.
Convex at the edge for clean food release, the geometry gives way to a wide hollow that runs from roughly an inch in front of the 66mm-tall heel to an inch before the low, pointed tip. Ample toughness is preserved toward the rear for demanding chopping tasks, while the tapering spine and finely honed tip geometry are balanced by added material as the hollow dissipates, producing a blade that feels dynamic, powerful, and versatile. From all-day vegetable prep to precise slicing and detail work, this striking bunka is equally at home—even in smaller workspaces.
The damascus pattern itself is mesmerizing, its maze of twists, turns, and repeating elements etched and polished to an elegant shine that carries seamlessly into the integral forged handle bolster. From there, with stepped, heirloom fit, a faceted Western-style handle takes form, sculpted from dyed and stabilized maple burl and inlaid with six handsome pieces of birch burl. Crisp, faceted transitions highlight each junction, offering both visual presence and a richly tactile feel in the hand. A flush, polished stainless steel retention bolt cap completes the handle at the rear.
