Description
Extending outward from the chef’s hand for 250mm and standing a formidable 66mm tall at the heel, the newest work of culinary art by Washington bladesmith Salem Straub is not only a visual masterpiece, it is a robust, high-performance tool for daily cooking. The blade is forged from a new mosaic damascus pattern of Salem’s design, its dense, intertwined structure evoking bow-tie motifs across the surface, a metallic landscape in which one can easily get lost. For the first time, Salem incorporates the just-released ProCut steel, a low-alloy, high-performance material that enhances strength and edge stability within the damascus formula. The result is a dynamic, versatile chef’s knife with a thin edge beneath Salem’s superb compound S-Grind geometry, optimized for every cut in the kitchen. Tough and rigid in the rear for dense ingredients, the blade spine’s full-distal taper results in a welcome touch of flexibility nearing the tip before culminating in a fine, needle-like point. From rock-chopping vegetables to long, precise slices of protein served tableside, this handmade chef’s knife is ready for every cut. The handle begins with an integral bolster sculpted from the same bow tie damascus as the blade, flowing into a recessed heirloom-fit ring of reclaimed Zildjian cymbal bronze, and completed with a richly figured piece of amboyna burl, its depth and character offering a window to nature with every movement. At the rear, a flush brass retention bolt cap is visible. For the discerning cook, the Bow Tie Damascus Chef Knife embodies Salem Straub’s wide-ranging mastery—an heirloom work of strength, elegance, and artistry, destined for greatness.
