Description
In his unmistakable style, this one-of-a-kind petty chef knife by Jelle Hazenberg pairs a voluptuously sculpted handle with a high-performance blade defined by forged, asymmetrical compound geometry. Offered here in pristine, unused, pre-owned condition, the 145mm / 5.7” blade is forged from 26c3 “Spicy White” high-carbon steel, a clean, low-alloy material prized for its fine grain structure, keen edge, and versatility.
The left face presents a tall, subtly convex primary bevel with a silky, hand-sanded satin finish, accented by a hint of forged texture along the spine. On the right face, Jelle employs a traditional approach, carefully hammer-forming the concave portion of the compound bevel one blow at a time. This hollow transitions smoothly into a lower convex section that culminates at a thin edge with only a slight secondary bevel that is ready to use while allowing the user to tune the final cutting geometry to personal preference.
Ergonomic control comes via a beautifully carved handle of Macassar ebony, its contours inviting a confident grip. Striking in form and thoughtful in execution, this Hazenberg petty chef balances sculptural presence with practical intent.
