Description
A classic, compact Bryan Raquin hand-forged gyuto that checks all the boxes. Bryan crafts high-performance, Japanese-inspired kitchen tools at his one-man shop in France’s Auvergne region, as he has since we first began working with him over a decade ago. Relying on the same clean, small-batch core steels—such as the 145sc high-carbon alloy found in this knife—and a consistent, deeply considered approach to balance, geometry, and function, Bryan continues to refine his work with each build, earning a devoted, cult-like following worldwide.
For this 208mm / 8.2” gyuto, low, superbly shaped convex bevels slim downward to a thin, razor-sharp edge, creating versatile geometry suited to nearly every cut in the kitchen. Rounded and rigid throughout most of its length, the blade’s spine tapers subtly before slimming more assertively in the final inches to a pointed, aggressive, and sturdy tip that balances finesse with strength. Beautifully honed on a progression of natural stones, Japanese finger stones impart Bryan’s signature kasumi finish to the primary bevels, the foggy gray hue contrasting the polished core steel below and the dark, forge-finished flats above. Comfort and control come courtesy of a simple, handsome octagonal wa-style handle sculpted from local burnt oak—quietly elegant, purposeful, and unmistakably Raquin.
