Description
A unique opportunity is at hand to own a piece of bladesmith Milan Gravier’s history, a one-of-a-kind chef knife with one previous owner in new, unused, pristine condition. Crafted at Milan’s one-man studio in France, this knife began as a personal project, one in which Milan set out to craft the knife from materials sourced around his neighboring areas. One of the first blades from Milan with a full stone polish, this 217mm / 8.5″ gyuto profile is forged from a house-made formula combining wrought iron reclaimed from the tools of local farms with a core of 135Cr3, a high-carbon alloy produced just kilometers away. Convex to a thin, razor-sharp tip, the blade’s geometry is balanced in all ways, destined to perform at the highest level in home or professional kitchens. Stiff throughout its length, the rounded and polished spine tapers to a glass-thin tip positioned perfectly for slicing and detail work. Old oak barrels supply the beautifully natural handle of traditional octagonal form which Milan caps with a handsomely contoured brass ferrule. In the project’s spirit of ‘rebirth,’ Milan completed this singular effort by partnering with renowned Japanese-French engraver Mali Irie-Cros to add an image of a phoenix rising to the blade’s right face. Exquisite in every way, Le Phenix Gyuto is a true heirloom of storied proportions. Included is a custom wood saya.
