Description
The latest exceptional kitchen cutlery creation from bladesmith Don Carlos Andrade is this French-inspired Alsace Petty Chef Knife, forged by hand at Don’s Central California Coast studio. Crafted from 1065 medium-carbon steel—an alloy historically prized for use in Japanese katanas—it is ideally suited for culinary work requiring a razor-sharp edge and excellent resilience. Its 148mm profile, with assertive edge geometry and a tough, pointed tip, is designed as a hard-working utility knife for any chef’s kitchen, shaped for versatility and years of uncompromising service. Don’s outstanding freehand convex bevel geometry, pronounced, symmetrical, and beautifully executed, ensures durability, superior cutting performance, and clean food release even through the densest ingredients. The rounded spine tapers steadily forward, creating a dynamic blade that slims in all directions from handle to tip. Purposefully heat-treated and differentially hardened, Don then etches and hand-polishes the blade to reveal a graceful hamon line and striking two-tone finish. The handle, carved in Don’s hybrid wa-Alsace form, is sculpted from a breathtaking piece of rare, vintage International Paper Co. bleached linen micarta. Tapering from back to front and ending in a dropped finger guard, the top and side facets are finished to a high polish while the three bottom faces retain a subtle texture for a secure grip. A single, hand-peened and polished steel pin and Don’s signature translucent green G10 inlay complete the build, making it both instantly recognizable and truly one-of-a-kind. A custom cloth-covered saya is included.
