Description
Madison, Wisconsin bladesmith Isaiah Schroeder is a dynamic and multi-talented artist whose wide-ranging skills converge in extraordinary handmade chef knives like the Black Pearl Gyuto. Measuring 238mm (9.4″) in length, the blade is forged from 26c3 ‘Spicy White’ high-carbon steel, offering exceptional geometry from heel to tip—laser-thin at the edge, subtly convex along the primary bevels, and finely tapered to a needle-like point. A touch of lateral flexibility in the forward inches adds a purposeful nuance to the performance. Through a differential heat treatment followed by Isaiah’s meticulous hand-sanding and etching, a flowing, organic hamon emerges across the satin-finished blade. The high-performance 26c3 alloy is celebrated for its purity, fine grain structure, and outstanding edge retention—making it a favorite among culinary bladesmiths. Designed for versatility, the blade stands 50mm tall at the heel, flat enough for efficient push and pull cuts, yet curved just enough to rock smoothly through herbs and vegetables. The gently rounded spine offers comfort in a pinch grip and flows seamlessly into a tapering bolster of house-made shibuichi—a traditional Japanese copper-silver alloy that Isaiah casts in-house, forming a beautifully sculpted, tactile transition into the handle. Completing the breathtaking build is a piece of finely contoured blackwood, heirloom-fit with precision and adorned with mother-of-pearl and abalone inlays. These wave-like elements echo the undulating hamon on the blade, tying the visual language of steel and wood into a harmonious whole. A custom wooden saya is included. This is not just a culinary tool—it’s a poetic expression of movement, material, and meaning, made to be felt as much as it is used.
