Description
Austrian bladesmith Martin Huber brings together performance, precision, and thoughtful material choice in this exceptional 230mm gyuto, his latest one-of-a-kind creation from the far north of Austria. Forged by hand from a complex, high-performance steel formula of his own design, the blade features O2 carbon steel outer jackets layered over a vivid 30-layer vein of pure nickel and O2 damascus, with a hard, razor-sharp core of 1.2419 high-carbon steel at the center.
Tuned for daily cooking, the blade’s especially thin, subtly convex geometry offers excellent cutting performance with a responsive edge and just a touch of forward flex thanks to the spine’s progressive taper. Quick in the hand, lightweight, and easy to maneuver, it’s shaped for cooks who value precision as much as versatility. The nicely rounded spine and choil make the knife comfortable in any grip, while the balance point—a touch ahead of the choil—gives the blade a natural, steady feel during long prep sessions.
For control and comfort, Martin pairs the blade with a handsome shield-style wa handle sculpted from richly colored Afzelia wood, fitted with a dark bog oak bolster, rings of G10, and accented by a striking span of fossilized mammoth tooth. Functional, refined, and crafted with care from end to end, this gyuto is built to shine as a daily driver in any kitchen.
