Description
Nick Rossi makes knives that announce themselves. This one is no different. The blade is forged by hand from homemade damascus with a 210mm / 8.3″ edge, finished in a way that puts two worlds on display simultaneously. Above the bevels, the flats are left in a hand hewn, forge-finished state, rough, textured, almost geological. Below it, the bevels are polished and etched to reveal a flowing damascus pattern that courses from heel to tip with a visual momentum that makes it hard to look away. The transition between the two surfaces is the knife’s defining visual moment, and Nick has made the most of it.
The geometry beneath that surface is equally well-considered. Nick’s convex bevels, versatile, superb, and consistently honed with care and purpose, slim to a thin, hard, and very sharp edge. The rounded spine tapers with purpose to an aggressive, pointed tip that is strong enough to handle real kitchen work without hesitation. At 9.3oz in a full 210mm blade, this knife carries with welcome authority. It is not light. It is weighted and rigid in a way that rewards a confident hand, and the balance makes every gram feel intentional.
The handle is stabilized birch burl, blazing amber and deeply figured, built around a black micarta frame and punctuated by a ring of fossilized mammoth molar in a blue that stops the eye cold. Two large, flush-polished pins complete the picture. The materials are chosen with Nick’s usual flair, individually remarkable, collectively coherent, and altogether unlike anything else on a kitchen bench.
