Description

A refined and elegant workhorse gyuto from France’s Milan Gravier, this Marbre Noir arrives in a form the maker considers his highest-level expression of the san mai format. Where previous Marbre Noir gyutos have carried random-pattern damascus beneath the kurouchi surface, this one is built around a controlled twist pattern, its spiraling layers visible on both faces with a graphic precision that reads as both wholly organic and intentional. Milan holds a place in an elite group of makers who develop and refine what is possible in a kurouchi finish, here not merely a surface treatment but a complex interplay of black iron oxide and revealed damascus that deserves a long look.

From beneath the darkened surface emerge bright moments of high-carbon steel, the cladding’s twisted layers catching light as though seen through moving water, separated from the stone-polished convex primary bevels below by a shinogi line that follows the underlying structure, its undulations representing the hand-hewn nature of the hammered material. Those bevels are shaped and finished on fine natural Nakayama maruka stones, producing the soft, misty aesthetic Milan returns to as his benchmark. The 135Cr3 carbon steel core is honed to a thin, razor-sharp edge built for the full range of kitchen work.

At 216mm / 8.3″ with 58mm of heel height, the blade tapers from a wide 6.1mm at the tang to 1.2mm an inch from the tip, the spine’s full distal taper delivering toughness at the heel and glass-thin precision at the front. Rounded and polished for comfort throughout. The handle is rokkaku hanmaru, Milan’s shield-style wa profile, in Mexican ziricote with a darkened stainless steel bolster. A wood he loves, and it shows.

Force, precision, and a finish almost no one else can make. One of a kind.
