Description
Some chefs will tell you that a full-size workhorse and a tourné knife are the only two knives a kitchen needs. Who are we to argue?
This one-of-a-kind bird’s beak parer by Vermont bladesmith Nick Anger is forged by hand from a homemade damascus in integral bolster construction. The 72mm blade’s bevels shine with a high polish, a contrast to the dark etched surfaces where the steel expands outward into the bolster. Sharp, thin, and hard at the edge, handheld work above the board comes naturally: peeling and shaping vegetables, coring and halving fruits, any task that rewards a curved edge and a confident grip.
For comfort and control, a long, gently sculpted handle of quilted maple and black micarta moves naturally in the hand from cut to cut, ingredient to ingredient. A small tool with outsize possibilities.
