Description

The cuchillo jamonero is one of the great specialized knives, purpose-built for the patient, practiced art of slicing whole-leg cured ham into the long, translucent sheets that define the experience. Nick Anger’s interpretation, forged at his Vermont studio, brings that tradition into territory entirely his own.

The Cuchillo Jamonero Oscuro is hand-forged in full integral construction: blade, guard, and front section of the handle all emerge from a single piece of Nick’s homemade damascus, the pattern running uninterrupted from tip to ferrule. The handle’s butt cap is the same steel as though seen through a geometric lens. Between them, a cylinder of ebony, dark and smooth, completing a grip that is as resolved in the hand as the blade is precise.

At 231mm, this is a compact jamonero, shorter than tradition dictates but no less capable. The 15mm-tall blade is narrow, precise, and built for the long pull cuts that feed clean, consistent slices to eager guests. Tapering from 3mm at the choil to 1mm at the tip, the spine grows progressively thinner front to back, the forward half carrying enough flex to follow the contour of the leg and release each slice cleanly. Less flexible than a traditional jamonero, but authoritative where it needs to be and responsive where it counts.

At 4.6oz, it disappears in the hand between cuts. Dark from end to end, with the homemade damascus pattern reading differently in every light. Oscuro in name and nature.
