Description
Bridging a multitude of elements, visions, and emotions into a singular culinary object, the Taca CroĆ Gyuto by Erik Gullikson stands as namesake for his heart-inspired integral handle and choil design. Blurring the lines betweenĀ clean and raw, as the artist describes it, this high-performance heirloom work is forged by hand in Ireland from an end piece of Damasteelās Dense Twist pattern stainless damascus. The construction showcases the materialās layered beauty in straight, linear formations along the handleās upper faces before transitioning seamlessly into the twisted motif as bolster becomes blade.
Meticulously polished to a high-shine, two-tone finish, the knife reveals the storied complexity of this small-batch Swedish steel through the upper bevels and across the grip, while the lower portion exhibits a smooth, mirror-like surface that supports an uninterrupted, nail-bending, razor-thin edge. Tall and convex above a glass-thin edge and even finer tip, the 250mm / 9.8ā blade feels dynamic and alive in the handādesigned as a chefās daily workhorse when precision is paramount. The rounded spineās full-distal taper preserves strength and rigidity in the rear, complemented by a gentle touch of lateral flexibility toward the forward inches.
Elegant, flowing lines carry the stainless damascus from blade to handle, the transition forming the heart-shaped element from which the piece takes its nameāa nod to the love and nourishment found in cooking. Secured with two domed, hand-peened copper pins, the damascus embraces a striking, live-edge portion of amboyna burl, continuing the story of raw, organic energy meeting purposeful, refined design.
A remarkable tool for the chef in us all.
